- Oil a large wok with sesame oil
- Add 4 packages of ground chicken on medium heat (about 4lbs which is about 1,815 grams)
- Cover with Cool Runnings Caribbean seasoning (or any other brand)
- Lightly cover the chicken with unsweetened cocoa powder (too much will make the chicken somewhat bitter)
- Cover the chicken with ground cinnamon,
- Add cayenne powder (to your desired taste and heat level)
- (optional) Add 1/4 cup of brewed decaf coffee (The wet coffee will help prevent the chicken from burning to the bottom of the wok. Adding too much can make the chicken slightly bitter.)
- Continue mixing until the chicken is thoroughly cooked (Takes about 40 minutes)
This method makes it great for adding to salads.
